Ingredients


  • 500 gr. peeled and diced carrots 

  • 1 white of leek, sliced. 

  • 1 carrot cut in regular dice (separately) 

  • Vegetable stock 

  • 1 chopped onion 

  • 1 tablespoon sliced ginger and/or garlic 

  • 1 cup oat milk 

  • 1 tablespoon olive oil 

  • Freshly ground black pepper if desired 

  • fresh, chopped coriander to garnish (or other fresh herb: parsley, tarragon etc). 

  • 2 teaspoons of Chinese 5 Spice or a ground cumin/coriander/fennel seeds (optional) 

  • Orange rind (optional) 

  • Salt and pepper

Directions


  1. Cut all the vegetables in regular pieces 

  2. Place olive oil in a pan and place on the heat. When the oil is warm, add successively the garlic, ginger (if using), onions, leeks, carrots adding a few pinches of salt as you add the vegetables, stir. Add spices. Stir well. Cook gently, for 10 minutes or until the vegetables are softening and render their water. 

  3. Add the vegetable broth to cover the vegetables in the pot, bring to a simmer. Once the vegetables are soft, add more stock and bring to another simmer, add the orange rind if using and blend the soup.

  4. Add the oat milk, a little more olive oil if you desire more richness and pepper. Adjust the seasoning. Garnish with fresh herbs.
